Why it's different
True cinnamon, not cassia
Most cinnamon sold in European supermarkets is cassia — a bolder, harsher relative grown widely across Asia. Ceylon Cinnamon, native to Sri Lanka, is the original: "true cinnamon." It's hand-rolled from thin layers of inner bark into soft, papery quills, giving it a lighter colour, a delicate sweet aroma, and a naturally low coumarin content compared to cassia.
That difference matters beyond flavour. Coumarin, found in much higher amounts in cassia, is subject to intake guidance in the EU — one more reason European buyers increasingly look for genuine Ceylon Cinnamon by name.
